New Special: Sweet Chili Shrimp on Crispy Rice

We've been running this as a special for a few weeks now, and the response has been unreal. People are ordering two and three plates at a time. So we figured it was time to give it the spotlight it deserves.

What Is It?

We start with rice that's been pressed and pan-fried until it's golden and crispy on the outside — that satisfying crunch you get from the bottom of a cast iron. Then we layer on sliced baby cucumbers for a cool, fresh bite, spread a smooth garlic aioli across the top, and crown each piece with a perfectly fried shrimp. The finish is a drizzle of our house sweet chili sauce and a hit of sesame seeds.

It's a little bit coastal, a little bit Southern, and completely addictive.

Why It Works

The contrast — Warm, crispy shrimp and crunchy golden rice against the cool snap of baby cucumbers. The garlic aioli brings richness, and the sweet chili sauce ties it all together with just enough heat to keep it interesting.

The texture — Every bite has something different going on. Crunchy rice, crispy shrimp, fresh cucumber, creamy aioli. Nothing is one-note.

The portion — These aren't tiny appetizer bites. Each piece is substantial enough that two or three make a solid lunch.

"We were messing around in the kitchen one afternoon and this just happened. Sometimes the best dishes aren't planned — they're accidents that taste too good to not put on the menu." — Paul
